Hanatomoe Yodan Muroka Nama

Yon-Dan Shikomi or 4-stage fermentation is relatively rare in sake production, and in this case it gives the sake more body and intensity. This shows a wonderful aroma of mango fruit, impeccable balance of sweetness & acidity on the palate & great depth of flavour.

Tasting notes

This is a complex sake with a variety of aromatics, rich flavors on the palate, and a nice balance of sweetness, dryness, and acidity. There are lactic aromas of yogurt and sweet butter, grain and rice notes of steamed rice and bran, and aromas of smoke duck, soya sauce, and light caramel. The body is medium and there are nice flavors of dried fruits on the palate.

Miyoshino Jozo is located in Yoshino region, Nara Prefecture, a locality named "Senbonzakura" in reference to the many cherry trees that cover the surrounding hills.

Brewer Teruaki Hashimoto is committed to local agriculture and he is determined not to burden local farmers with the difficulty and risk of cultivating hard to grow varietals. He takes whatever rice the farmers grow and adjust his methods to bring out the best in it. Hashimoto-san also works exclusively with natural yeasts and minimal temperature manipulation. He feels that this is the best representation of the local environment, and the acids emitted by the yeast make the resultant sake very unique.

Embracing old-school brewing methods without being chained by tradition, Hashimoto-san aims to make the sake he wants to make ie. sake to be drunk with food, with character and acid is proving to be the type of sake many modern drinkers are looking for.
