
Copenhagen Sparkling Tea - Blå
BLÅ starts out with delicate aromas of Jasmine, chamomile and a hint of citrus. This is followed by a round taste from the careful selection of white teas and accompanied by good complexity and depth from the green teas. It ends in a long finish joined by comfortable tannins created by the Darjeeling First Flush. The colour is light green with yellow nuances. Green jasmine tea is one of the oldest and best-known aromas used in tea. Grown at an altitude of approx. 1300-1450m above sea level in China. Great care is taken to create jasmine-scented tea where the fresh jasmine blossoms are picked early in the morning and mixed in with green tea leaves, where a small amount of heat is applied to the mixture. The jasmine tea features a delicate flavour profile and exudes an aromatic floral scent, which needs to be infused thoughtfully to preserve the taste. Jasmine tea is an herbal tea that is brewed using a mixture of tea leaves from the Camellia sinensis plant and infusions of fresh jasmine blossoms. Tea leaves are harvested from the plant in spring and are carefully preserved until the jasmine blossoms begin blooming in summer. The blossoms are then added to the stored leaves and allowed to infuse for a period of several hours or weeks depending on the tea master and blend. The jasmine scent infusion process is then repeated several times.
BLÅ is based on a careful selection of 13 organic teas, which are brewed at different temperatures and time intervals. The blend is combined in one bottle, together with a small base of grape must and a dash of lemon juice. Pairs well with grilled meats and roasted vegetables and pairs well with grilled meats or lasagne

The Sparkling Tea category originated in 2010, created by award-winning sommelier Jacob Kocemba during his time at a Michelin-starred restaurant in Copenhagen, Denmark. He realised the many possibilities within the world of tea, when he couldn’t find a matching wine for a dessert, despite a wine cellar of more than 1,700 wines. Instead, the solution came in a homemade tea extract, which consisted of a blend of different exclusive teas. The new drink became a great success and a favorite amongst the guests of the restaurant.
Jacob has since then – through hundreds of trials and his unique ability to combine flavours – developed exquisite flavour combinations that form the basis for the different versions of Sparkling Tea.
To live out the dream of making Sparkling Tea a new global beverage category, Jacob partnered up with Bo Sten Hansen in 2017. Bo has many years of experience in business development and has always had a great passion for gastronomy.
