Macho Aiyama Junmai 80 (Woman)

Junmai sake from Makino Brewery (Osakazuki, 大盃) in Takasaki, Gunma, made from 100% Aiyama (愛山) rice polished to 80%. It is part of the playful “Macho” series, and this bottle is the feminine counterpart: the rice is known for its soft, plump character, and the brewery pitches it as a softer contrast to the more robust Macho styles. It has a light fizz when first opened.

Tasting notes

Supple, full-bodied texture with the plump, rounded character typical of Aiyama, a velvety mouthfeel, and a bold, distinctive flavour. A light fizz when first opened. Reviewers describe the Aiyama sweetness as lingering, with a fresh acidity that keeps it from feeling heavy.
