Macho Omachi Junmai 80 (Guy Label)

This series concept is simple: low-polish rice retains more protein, and protein is Macho. The 18th-generation master brewer consciously bridges traditional techniques with modern approaches. The 'Guy Label' refers to the male bodybuilder illustrated label, distinguishing the pasteurized (hiire) release from the limited namazake editions. Brewed with 100% heirloom Akaiwa Omachi rice polished to only 80%, fermented with the brewery's signature Association No. 14 yeast, and gently pasteurized using a high-performance Pasteurizer that preserves much of the freshness of raw sake.

Tasting notes

Despite its low polish ratio, this sake is surprisingly light and elegant. The aroma presents bright citrus and a hint of banana from the Association No. 14 yeast. On the palate, soft rice umami spreads gently before a lively mid-palate acidity steps in to tighten the flavour, delivering a refreshingly dry, clean finish. A slight tingle of residual carbonation adds vibrancy. The overall impression is bold yet nimble — full of rice character without being heavy.
