Macho Koshiki Kimoto 90 (Gorilla Label)
The Gorilla label is the flagship of the lineup — a Koshiki Kimoto, meaning the traditional kimoto starter was conducted in a wooden kioke vat, with no cultured yeast added at any stage, relying entirely on ambient brewery yeast. The sake rice (Yamasake4, grown in Gunma) is barely polished to just 90%, preserving maximum rice protein and character. The moto (starter) fermented for approximately 50 days — roughly ten times longer than modern quick-ferment methods — before main fermentation. The result is a powerful, earthy, and complex Junmai that is wild in spirit but surprisingly clean on the finish.
Earthy grain aromas lead with roasted nuts and savoury umami on the nose, underpinned by hints of honey and rich, aged rice. On the palate, the sake is full-bodied and richly textured, with lively natural acidity from the extended kimoto fermentation and deep complexity from the low-polish rice. Powerful and wild yet beautifully balanced, it delivers a remarkably clean, dry finish despite its robust body.
