Miyakanbai Shisui EXTRA CLASS Junmai Daiginjo is the flagship premium offering from Kanbai Shuzo, a brewery founded in 1918 in Osaki City, Miyagi Prefecture. Operating as a 'cultivation-brewery' (saibai-jozo-gura), Kanbai Shuzo is the only brewery in Miyagi Prefecture that grows all of its own sake rice from seed — including Miyamanishiki, which the brewery was the first to cultivate in the prefecture. Brewed using 100% estate-grown Miyamanishiki rice polished to 35%, and soft subsoil water drawn from the Narusegawa River, Shisui is the signature expression of the brewery's EXTRA CLASS premium tier: all estate rice, milled to 35% or below. The brewery's guiding philosophy is 'one cup that is truly delicious' (ippai de umai sake), and Shisui embodies this — delivering a pure, unadulterated richness at an extraordinary price point. Miyakanbai sake has been served on ANA international first and business class, and on Singapore Airlines Suites.

Tasting notes

The nose is fresh and elegantly fruity, with a floral, blossom-like quality. On the palate, the entry is clean and crystal-clear with a water-like transparency and a soft, yielding mouthfeel. The mid-palate develops a deep, rich umami-driven complexity — full of high-quality rice character — before finishing with a refreshingly dry, crisp, and clean close. The lingering aftertaste is remarkably refined for its grade.

The Beautiful Taste of Saké Is the Gift of Rice...

Their sake was born nearly one-hundred years ago, in 1918. The founder and landowner, Jiro Iwasaki bore the sake that was far superior to the local plain rice. It has been said that Iwasaki approached sake-making in a playful manner. Sake-making can become very rigorous and at times, unenjoyable. But they strive to keep Iwasaki’s values alive by keeping their playful and enjoyable spirits while making sake. To remain true to their founder, they continue to make their sake seriously, passionately, and diligently.

The brewery is located almost right in the middle of the Osaki Plain. You’ll see it standing quietly, facing the endless countryside landscape which stretches as far as the eye can see. If the word “Miyakanbai” wasn’t written on the wall, you could mistake this brewery for a typical farmer's house. This is the only “Cultivation and Brewing Brewery" in Miyagi that handles everything from the processing of saké rice to saké brewing.
